FSSAI advises against the unauthorized use of liquid nitrogen in food by food serving establishments, restaurants, bars, etc.

On 3rd June 2024, FSSAI advisedย that Liquid nitrogen (INS 941) is permitted to be used in Dairy-based desserts, and ice cream at GMP level for the technological function ofย Contact freezing and cooling only. It is not the intendedย purpose/technological use of the additive and shall be consideredย asย Non-compliance.
